Everyday, I’m usually in a coffee shop working. This is challenging at times, because my mind wanders (especially when I’m hungry). One thing that I’ve found that helps me stay focused AF is snacks. I always, always, always have some food on hand, because then I can’t use the old I’m hungry excuse for interrupting work. I typically pack fresh fruit, smoothies, oats, or some sort of granola bar.
At the beginning of my plant-based journey, I always bought pre-made bars- usually Larabars. I liked them because they’re raw and have only a few whole food ingredients. I started making my own over time because I can control the ingredients, it’s WAY cheaper, and only takes about 10 minutes on a Sunday (start to finish) to do it.
This is an easy recipe for summer-inspired “Larabars” that are awesome for an on-the-go snack . You only need a few ingredients (I picked all of mine up at Trader Joe’s) and about 10 minutes to make them. One tip- be sure to pit the dates before you throw them in the food processor.
Vegan Summer Berry Pie Larabar
(makes 8-16 balls/bars)
- 1/2 cup Medjool dates, pitted
- 1/2 cup dried blueberries
- 1/2 cup dried cherries
- 1 cup raw almonds
- In a food processor, pulse dates, blueberries, and cherries until well combined (5-10 times).
- Add almonds, pulse until combined, forming a sticky dough (another 5-10 times).
- Form into 8 bars or 16 balls. Enjoy!
Yummy!! My TJ’s didn’t have dates so I substituted prunes and it turned out just fine. They’re itty-bitty but concentrated goodness. 😉
