I’ve been on a smoothie kick lately (see my papaya, kiwi, and blueberry muffin creations) and today’s recipe is no different. I typically like to start a weekday with a fresh smoothie full of tasty frozen fruit that will keep me carbed up throughout the morning. They’re also quick, easy, and perfectly portable.
Today’s drink is a play on the green peanut butter and jelly smoothie I’ve been drinking lately. Blackberries are more tart than blueberries, so I like to add in a few drops of liquid stevia to sweeten the drink. If you don’t have stevia, you can also sweeten the drink with a few drops of maple syrup.
Don’t forget the gluten-free granola on top! It pretty much takes your breakfast to the next level.
- 1 frozen banana (peel prior to freezing)
- 1/2 cup blackberries
- 1 cup unsweetened almond milk
- 1/2 cup of ice
- 1 tbsp peanut butter
- 1/2 tsp vanilla extract
- pinch of salt
- a few drops liquid stevia to sweeten (optional)
- Combine all ingredients in a high speed blender.
- Blend until fully pureed.
Blackberries are SO summer to me!
Yes!!! Totally agree. I usually like to sweeten the blackberry concoctions with stevia though- those babies can be sour!
