Smoothies are awesome. (Blueberry smoothies are even better!) They’re a great way to pack a ton of nutrients into a meal that’s portable, tasty, and perfect for the morning when you’re running out the door. Or, if you’re in the mood to eat rather than drink your meal, you can add more frozen fruit and decrease the amount of liquid in your recipe and you’ll be left with a smoothie bowl- the perfect base for toppings!
Today’s healthy, vegan blueberry smoothie is an awesome alternative to the sugar-bomb that is a muffin. There’s a ton of crap in muffins that inevitably leaves us feeling tired, weighed down, and unhealthy. Swap the breakfast muffin for a healthy breakfast smoothie and you’ll feel awesome to start your day.

- 1/2 cup frozen blueberries
- 1 frozen banana
- 1 cup unsweetened almond milk
- 1/4 cup rolled oats
- 1/2 tsp vanilla powder
- 1/2 tsp cinnamon
- dash of salt
- a few drops liquid stevia (optional)
- Place all ingredients in a high-speed blender.
- Blend until fully combined.
Blueberries are my favorite for smoothies!
Yes- so good with peanut butter too in smoothies. Tastes just like a PB&J!
