Whole Food Plant-Based Piña Colada

A tropical whole food plant-based smoothie that's packed with plant nutrients.

Ingredients

  • 1 3 oz coconut smoothie packet (see notes for substitutions)
  • 1 frozen banana
  • 1.5 cups frozen pineapple
  • 1 cup unsweetened coconut milk
  • a few drops stevia (optional)

Instructions

  • Combine all ingredients in a blender. Blend until creamy. Taste and adjust to your liking.

Notes

For the coconut cream- I used a coconut smoothie pack I found in the frozen fruit section, but you can definitely use whatever you have! Here’s a little sub guide for the one packet of coconut cream:
-2 tbsp coconut cream from a can of coconut milk OR
-1/4 cup coconut meat OR
-a handful of shredded, unsweetened coconut OR
If you don’t have anything other than coconut milk or coconut water - just use that! You’ll still get a nice coconut flavor from it.
And- you can also make this Pina Colada into a Pina Colada smoothie bowl- just decrease the amount of coconut milk to a 1/2 cup.
