Vegan Protein Ice Cream

If you eat a plant-based diet, you’ve probably been asked where you get your protein from(or you’ve seen memes about it). This question can seem a little crazy to plant eaters, because protein comes in so many different plant forms. Beans, quinoa, peas, chickpeas, and leafy greens are just a few sources. If your diet is a good mix of these things, you most likely don’t need to supplement protein.

On days when you want to add an extra hit of protein (like after a grueling workout), this Vegan Protein Ice Cream is a bomb way to do it. You can use vegan protein powder (I like this powder) or you can try straight peanut flour. I alternate between using peanut flour and raw vegan protein powder for this ice cream, which both work well for post-workout recovery. Plus, what’s better then (plant-based) ice cream after a workout?

Vegan Protein Ice Cream

Serves: 1 bowl
A plant-based post workout recovery ice cream!
Ingredients
  • 2 cups frozen watermelon
  • 1/2 cup almond milk (or other non-dairy milk)
  • 1/4 cup frozen banana
  • 2 tbsp peanut flour or 1 scoop vegan protein powder
  • a few drops liquid stevia (option)
Instructions
  1. Blend all ingredients in a high speed blender. Eat and refuel those muscles.
