Happy New Year! I hope everyone’s year is off to an awesome start. You may have resolved to eat healthier this year and this yummy Carrot Cake smoothie is a great place to start. I make smoothies for my work lunches and then take a few healthy snacks to eat throughout the day (like fruit, hummus and carrots, or homemade granola bars). More about that here.

To set yourself up for success, you can make a smoothie at night, freeze it and then take it to work for lunch (let the smoothie sit on your desk until fully defrosted). This can help you to stay on track with your nutrition goals and also help you to avoid eating out for lunch (which usually proves to be much more difficult than prepping your own food). If you’re working from home, make the smoothie fresh! Either way, if you’re feeling a little burnt out from sweets and heavy holiday foods, this Carrot Cake Smoothie is calling your name.It’s filled with immunity-boosting ingredients like carrot juice, OJ, and fresh ginger.

Carrot Cake Smoothie

Serves: 1 serving
A delicious gluten-free vegan Carrot Cake Smoothie that is an awesome wellness drink for post-holiday detoxing
Ingredients
  • ¾ cup carrot juice (can be found at most grocery stores)
  • ¼ cup orange juice
  • ¼” piece peeled fresh ginger
  • 1 banana, frozen
  • 1-2 Medjool dates, seeds removed (depending on sweetness preference)
  • 1 tsp cinnamon
  • handful of ice
Instructions
  1. Combine everything in a high-speed blender.
  2. Blend until completely pureed.
