Five years ago, I survived on a diet of fat free cheese, partially-hydrogenated fake soy chicken and artificially-sweetened “fat free, sugar-free” ice cream and was unable to control myself due to the amount of processed chemicals I ate and my unhealthy relationship with food. My eating habits left me feeling anxious, tired, overstimulated, obsessed, bloated and just plain unhappy.
Five years later, I’ve transitioned to a plant-based diet of fruits and vegetables. I don’t eat meat, poultry, fish, dairy, sugar, gluten, or processed foods. And I truly don’t miss any of it. I’ve never felt happier, more energized, or healthier than I do today. And I attribute so much of that to my plant-based lifestyle.
Eating all fruits and vegetables used to seem impossibly hard to me. But after transitioning to this diet, I know that anyone can do this, and do it with success. Eating this way has helped me transform my mind and body and I really desire to have everyone experience this and feel this way. It all starts with simple, healthy changes now.
